15 Minute Kofu Fajitas

1 tbsp olive oil
150g Bonsan Kofu Ragu Chunks
1 medium red onion, sliced into half moons
1 red pepper, sliced
1 yellow pepper, sliced
1 green pepper, sliced
5 flour tortillas
1 sachet fajita seasoning

Tomato salsa
Plant-based sour cream

1.Heat the olive oil in a large frying pan over a medium heat. Add the kofu chunks, onion, fajita seasoning and peppers and fry for 5-10 minutes, or until everything is soft. Remove from the heat to serve.
2.Place a tortilla on a plate and top with some of the fajita mixture. Add a spoonful of plant-based sour cream, tomato salsa and guacamole. Roll the fajita and repeat with the remaining tortillas. A simple and quick midweek dinner that’s filling and full of flavour!
