Easy 15 Minute BBQ Jackfruit Rolls with Avocado Slaw

1 pack of Bonsan Smoky BBQ Jackfruit
5 whole grain vegan buns
½ ripe avocado
1 tbsp maple syrup
1 lemon or lime (juiced)
Salt and pepper (to taste)
300g carrots, shredded
300g shredded cabbage
1 fresh red chilli, sliced
Handful of fresh coriander, chopped
130g cashews

Serves: 5

1. To make the avocado slaw, add the avocado, maple syrup, lemon or lime juice, salt and pepper to a small bowl and whisk until combined. Add the chilli, coriander, carrots and cabbage, and toss to coat.
2. Place the slaw in the refrigerator until serving.
3. Heat a large skillet over a medium heat. Add the BBQ jackfruit and cook for about 5 minutes or until heated through and slightly crispy.
4. Place generous portions of slaw on the bottom buns, top with a generous serving of BBQ jackfruit and a sprinkle of cashews. An easy and flavourful addition to your plant-based BBQ!
