Easy 20 Minute Vegan Jackfruit ‘Duck’ Pancakes

For the Jackfruit ‘Duck’:
1 pack of Bonsan BBQ Shredded Jackfruit
2 tbsp sesame oil
2 large spring onions, finely sliced
3 cloves garlic, finely diced
2 tbsp ginger, finely diced
1 tsp Chinese five spice
2 tbsp Tamari
3 tbsp Hoisin sauce
2 tbsp rice vinegar

To serve:
Chinese pancakes
Hoisin sauce
1 cucumber, cut into matchsticks
1 bunch of spring onions, cut into thin strips lengthwise
Sesame seeds, to garnish
Fresh coriander, to garnish

Serves: 4

1. Place the jackfruit in a bowl and use the back of a fork to break it into shreds.
2. Heat up 1 tbsp sesame oil in a frying pan and gently fry the spring onions until softened. Add the garlic and ginger and fry for a few more minutes.
3. Add the five spice mix and fry for a further minute.
4. Add the jackfruit, soy sauce, 2 tbsp hoisin sauce, remaining sesame oil and rice vinegar. Mix everything well in the pan and fry on a high heat for 10 minutes or until the jackfruit is crispy.
5. Warm your pancakes in a bamboo steamer, microwave, or in a pan with a lid on a very low heat for a few minutes.
6. Put some hoisin sauce on the inside of each pancake, followed by jackfruit ‘duck’, the sliced cucumber and spring onion. Sprinkle with sesame seeds and fresh coriander, roll up and enjoy as a delicious plant-based fakeaway!
