Easy Sweet Potato Pizzas

1 sweet potato
Drizzle of olive oil
1 tsp salt
1 tsp black pepper
Tomato passata
Red onion, sliced
Green jalapenos
Spinach
Vegan mozzarella cheese
Bonsan Green Pesto
Fresh coriander leaves

Serves: 2

1. Preheat the oven to 200/180C fan.
2. Rub the sweet potato with olive oil, salt and pepper and place in the oven to bake for 20 minutes or until soft.
3. Remove the sweet potato from the oven and slice in half lengthwise. Place the two halves on a baking tray, skin side down. Place a piece of baking paper over the sweet potato and using a heavy skillet or frying pan, flatten each potato.
4. Top each potato round with a base of tomato passata, sliced red onion, jalapenos, spinach and vegan mozzarella cheese.
5. Place in the oven for a further 10 minutes. Once the cheese has melted, remove from the oven and add a few spoonfuls of green pesto and a sprig of fresh coriander. Serve and enjoy this wholesome twist on a classic favourite!
