Lunch, Main meals


I jar BONSAN jackfruit, drained
2 tbsp extra virgin olive oil
1 small onion, diced
2 garlic cloves, crushed
1 tsp smoked paprika
1 tsp dried oregano
½ tsp ground cumin
1 pinch chilli flakes

To serve:
Red cabbage
Vegan coleslaw (optional)
6 burger buns, halved, toasted

Serves: 6

1. Use 2 forks to separate jackfruit fibres. Discard any seeds. Thoroughly rinse and drain well.
2. Heat olive oil in a frying pan over a medium heat. Add onion and garlic. Fry until tender. Add jackfruit and all herbs and spices & ½ cup water. Continue to cook, stirring occasionally, for 15 minutes or until tender.
3. Fill burger buns with rocket, red cabbage, pulled jackfruit mixture and coleslaw. Serve.
