Lunch, Main meals


60ml Organic extra-virgin olive oil
½ medium white onion, chopped
3 cloves garlic, minced
1 (400g) tin chopped tomatoes
½ teaspoon sea salt, or kosher salt
¼ teaspoon freshly ground black pepper
1 pinch granulated sugar
10g fresh basil
1 (150g) pack Bonsan Organic Kofu Ragu Chunks
4 White sub rolls

To garnish:
Fresh oregano
Vegan parmesan cheese
Pea shoots

Serves: 4

In a large skillet or saucepan, heat the olive oil over medium heat. Sauté the onion and the garlic for just a few minutes, until soft.
Add in the chopped tomatoes, and season well with salt and pepper. Add a pinch of sugar. Allow the sauce to simmer for 10 to 15 minutes.
Meanwhile, pan fry the Kofu Ragu Chunks for a few minutes until crispy.
Remove the pan from heat and stir in the Kofu Ragu Chunks and basil just before serving.
Serve in the sub rolls with a sprinkle of vegan cheese, oregano and pea shoots. Enjoy!
