One Pot Vegan Sausage & Sundried Tomato Pasta

2 tbsp olive oil
4 Bonsan Kofu Sausages, sliced
1 onion, diced
300g pasta of your choice
200g cherry tomatoes, halved
6-8 sun-dried tomatoes, roughly chopped
2 tbsp tomato purée
1 litre vegetable stock
Salt and pepper, to taste
100ml vegan cream
40g fresh baby spinach, chopped

Serves: 4

1. Heat the oil in a large, shallow casserole dish and fry the sliced sausages and onions for 6 minutes or until the sausages have browned all over.
2. Add the cherry tomatoes and sundried tomatoes to the pot along with the pasta, tomato purée and stock. Season with salt and black pepper. Bring to the boil, then reduce to a simmer, cover and cook for 12-14 minutes, stirring every few minutes, until the pasta is cooked through.
3. Add the spinach to the pan along with the vegan cream. Stir well and cook for a further minute until the spinach has wilted. Taste and adjust seasoning if required.
4. Serve with a sprinkle of fresh basil and enjoy as a super easy mid-week meal!
