Vegan ‘Duck’ Jackfruit Pancakes
JACKFRUIT ‘DUCK’
200g Bonsan Teriyaki Jackfruit
REMAINING INGREDIENTS
Chinese pancakes
1 cucumber, cored and cut into matchsticks
1 spring onion, cut into thin strips lengthwise
sesame seeds, to garnish (optional)
fresh coriander leaves, to garnish (optional)
Serves: 2
1. Warm the teriyaki jackfruit slightly in a dry frying pan.
2. Warm up your pancakes in a bamboo steamer.
3. Place a heaped spoonful of jackfruit ‘duck’ onto the pancake, followed by the cucumber and spring onion matchsticks. Sprinkle with sesame seeds and fresh coriander leaves for decoration.
4. Roll up and enjoy!
