2 large Tomatoes cut in 8 slices
1/4 cup Bonsan Vegan Organic Aioli
4 slices Sourdough Bread or Bread of choice
Bonsan Vegan Organic Tomato Lupin Spread
1 large Avocado
Small handful of Rocket
Salt & Pepper
1. Preheat the oven to 180°C (160° fan) and line a baking tray with baking paper. Place sliced tomatoes on the baking sheet. Drizzle with olive oil and sprinkle salt, pepper & oregano on each slice. Place in the oven and cook for 15-20 minutes – or until tomatoes are tender.
2. Spread vegan butter on one side of each bread slice. Heat a pan over medium heat. Place bread (butter-side down) in the pan and cook until browned. Remove bread from the pan.
3. To assemble, spread the Bonsan Vegan Organic Tomato Lupin Spread on one side of the bread and the Garlic Aioli on the other. Top with roasted tomatoes, avocado and rocket. Slice and serve.
